Technique and respect for ingredients come first. The more knowledge there is to draw from, the wider the repertoire becomes. A first love for pastry still sits at the core, shaping the way flavour and texture are built.

 

There’s a tendency to overthink food. It doesn’t need to be that complicated, it needs to be eaten and enjoyed. But it’s worth thinking carefully about where it comes from, how it’s treated, how little goes to waste, and the nourishment it provides.

 

The end goal is simple: food that feels human, a bit nostalgic, and good to eat, not something that needs to be overly explained to you.
